Het moet toch niet gekker worden; twee geweldige, authentieke Spaanse recepten in 4 dagen tijden! Je kunt gerust zeggen dat ik langzaam maar zeker in een echte Española aan het veranderen ben. Van Spaanse tortilla naar Salmorejo, is het nu de beurt aan het beroemdste gerecht uit de Spaanse keuken: Paella. En dat is best een feestje waard!
Paella kan op heel veel verschillende manieren bereid worden. Het originele recept barst van de schepdieren en vis, iets waar deze blondine (of moet ik nu grijze zeggen?) niet zo fan van is. Gelukkig zijn er meer Spanjaarden die de zee niet zo kunnen waarderen (of juist wel; laat wat dat betreft die visjes maar lekker zwemmen) en krijgt mijn eigen Spaanse vriend geen schelpdier door zijn keel. Of dat betekent dat wij nooit Paella kunnen eten? Dacht het niet! Paella is zelfs één van onze favoriete maaltijden. Deze kip paella kun je thuis maken en neemt ongeveer net zo veel tijd in beslag als het maken van Italiaanse Risotto. Valt reuze mee. Ben je er klaar voor? Read on!
Wat heb je nodig? (2 personen)
- Een platte, redelijk diepe pan
- Bomba of paella rijst (het verschil met normale rijst is dat dit een kleine, ronde graan is)
- Extra vierge olijfolie
- 1 groene paprika
- 1 knoflookteentje
- 350 gr kipfilet
- 150 gr doperwten (klein potje, nettogewicht)
- 150 gr snijbonen (halve grote pot, nettogewicht)
- 1L kipbouillon uit pak (zoals deze, bijvoorbeeld) of zelf maken
- Paella kruiden (ik gebruik deze, maar weet dat Knorr ook een kant en klaar kruidenmix verkoopt, verder kun je het ook altijd nog zelf maken)
- Rode geroosterde paprika (ook uit blik, in olie)
- Citroen
Hoe bereid je het?
- Mocht je geen kipbouillon uit pak gebruiken, zorg er van voor dat je d.m.v. bouillon kruiden één liter water kookt en de kruiden mengt. Zet de bouillon aan de kant en laat het eventueel een beetje afkoelen.
- Snijd de groene paprika en de kipfilet in kleine stukjes. Mocht je verse snijbonen gebruiken, snijd dan ook deze in stukjes.
- Warm wat olijfolie op in een grote, redelijk diepe pan en bak de kip. Zodra de kip gegaard is gooi je groene paprika samen met de doperwten, knoflook en snijbonen erbij op niet al te hoog vuur voor ongeveer 10 minuten.
- Zodra alle groenten en kip gaar zijn, voeg je twee goedgevulde koffiekopjes paella rijst toe aan de pan. Voeg eventueel nog een extra scheutje olijfolie toe. Laat de rijst in totaal 10 minuten meebakken. Blijf erbij staan om te roeren, de rijst wilt nog wel eens aankoeken. En dat willen we niet!
- Tijd om de bouillon toe te voegen! Voeg net zoveel bouillon toe tot de rijst helemaal ondergedompeld is. In totaal laat je de rijst zo een 20 a 30 minuten lang de bouillon opnemen, waarbij je wanneer nodig extra bouillon toevoegt zodra de rijst aan de bovenkant droog wordt. Hier voeg je tevens de paella kruiden aan het mengsel toe. Mocht je de paella te droog vinden worden, maar is de rijst nog niet gaar? Voeg dan wat extra water toe.
- Zodra er zo een 20 a 30 minuten om zijn, proef je een hapje. Is de rijst zacht genoeg en zit er bijna geen bouillon meer in de pan? Perfect! Snijd de rode geroosterde paprika in stukjes en meng deze door de paella heen. Je kunt er ook nog wat rode paprika opleggen voor de decoratie.
- Als het goed is heeft de paella meer dan genoeg smaak dankzij de kruiden en de bouillon, maar je kunt eventueel nog wat peper en zout toevoegen (onthoud dat dit wel typisch Hollands is ;-)). Serveer de paella met een stukje citroen en tada, genieten maar!
